Bok Choy

Last week I was not feeling the best. Aching muscles, fatigue, you name it! Even as a dietitian, my diet is not always as great as it should be. I felt like I needed something healthful and out of the ordinary, so off to Whole Foods I went.

Enter:
boy choy (Chinese cabbage).

Nutritional Highlights:
-Low in calories (only 20 calories in 1 cup, shredded, cooked)
-High in vitamin A, beta-carotene (antioxidants, supports eye health)
-High in vitamin C (another antioxidant)
-Good source of calcium & potassium (supports strong bones and heart health)
-May help to prevent certain cancers

If you've never had this veggie, it tastes more mild than green cabbage, yet is still a little spicy! It's easy to prepare & tastes great raw or cooked. Consider adding to a stir-fry or soup, serving as a side dish, or preparing on the grill. This time I picked mine up at Whole Foods, already prepared Recipe Here.
